FRESH COCONUT CACAO ELIXIR

This is a nourishing and energizing drink that honestly is so heavenly and really decadent. It’s really just a template as you can definitely mix and match ingredients depending on what you have around your kitchen. If you like, you can add a bit of a strong medicinal tea along with the coconut water to further amp up its nutrition even. You can also easily add any medicinal or adaptogenic powders.

Young green coconuts are usually readily available these days, and often found at stores like Whole Foods with the meat and water exposed already, ready to drink with a straw - or to pour out for use in this recipe! After you pour out the water, simply dig in with a large spoon to completely scrape out the meat; it’s easy. If you can’t find a coconut already opened, I suggest searching out a Youtube video to learn how to open your own with a special tool or an inexpensive cleaver. When you open the fresh young coconut, pour out the water into a measuring cup, then scoop out the meat into the same vessel. Add water or tea if need be to reach 2 cups total volume.

Dried dates are a delightful addition to this drink; use one or two on their own or in combination with additional non-glycemic sweetener. Or skip the dates or any sugars, and simply use monkfruit and/or stevia to taste. You can make the drink cold or warm depending on your taste. Be sure to refrigerate the coconut if you want a cold drink, and have some piping hot tea to add in addition to the room temperature coconut water if you'd like it warmer. I love it both ways.

Fresh Coconut Cacao Elixir •

Water + meat scooped from a fresh young coconut, plus additional liquid to make 2 cups total

1 tablespoon coconut oil

¼ cup raw cacao powder

¼ teaspoon vanilla powder, or ½ teaspoon vanilla extract

Big pinch sea salt

Sweetener of choice to taste

optional:

2 teaspoons maca and/or other medicinal herbal powders

Blend all ingredients. Add additional liquid to thin the consistency if you desire. Sweeten to taste and pour into a jar or pretty glass. Top with a sprinkle of bee pollen, nibs, or a dash of spice. Enjoy the delicious nutrition immensely!
