FREEZER FUDGE WITH TONIC HERBS

This recipe is another template perfect for you to begin with and personalize to make your own. The fudge is a superb delivery vehicle for medicinal herbal powders of any sort, a great alternative to an elixir if you want to make ahead and have your medicinal powders in a ready-to-eat delicious fudge form.

Obviously, feel free to mix and match your medicinal powders as you prefer, using whatever you have on hand, in any combination and ratio. If you want, you can consider the dosage of the powders you add and plan to eat a certain amount of fudge daily so you can get the right dose of your daily medicine!

This recipe is best for keeping in the freezer, where they will stay hard; that way you don’t have to worry much about the soft consistency they have at warmer temperatures. The pieces will definitely become melty and soft at regular room temperature, so if you come to love this recipe, you could always store it all in a glass jar for your travels and use a spoon to eat it daily! Careful though, it goes fast this way! ;) You could also consider using all cacao butter instead of any coconut oil so they will be harder at room temperature.

Of all the nut butters, I love making this with nutrient-dense raw tahini but you can use other nut or seed butters if you prefer

Tonic Herbal Fudge

2 Tablespoons coconut oil

1 - 2 Tablespoons cacao butter, melted

1/3 cup raw tahini or other high-quality nut or seed butter

6 tablespoons raw cacao powder

about 10-12 teaspoons medicinal herbal extracts and powders such as: maca, shilajit, mucuna, ashwagandha, he shou wu, chaga, reishi, any medicinal mushroom,
cordyceps, mesquite, lucuma, spirulina or blue-green algae

about 3/4 tsp vanilla bean powder

raw honey to taste, maybe start with 3 tablespoons – or less if you use stevia also

¼ cup goji berries or dried mulberries, plus more for decorative topping

Put all of the ingredients, including 1/4 cup of the berries, into a food processor. Turn it on and process for a few minutes until the mixture is homogenous and the goji berries are chopped. Taste it, and adjust the sweetness or flavor balance to your liking. It might take you a couple of tries to get adequate sweetness and balance, and it’s worth it to take an extra minute at this point so your fudge is the most delicious it could be!

Once you’ve tweaked the mixture and it tastes delicious, spoon dallops into a regular or silicone ice cube tray, tapping the tray against the counter to flatten the tops and evenly disperse the mixture in the molds. Top the fudge with a few goji berries or sprinkle with cacao nibs or other medicinal powders, then put them in the freezer. Remove from the molds when hardened and seal the fudge pieces in a bag or container to store. Alternately, you could spoon the fudge onto a piece of parchment on a sheet or plate, place in the refrigerator until it’s firm enough to cut into smaller pieces with a sharp knife, and then store sealed in a container in the freezer.
