Franky G’s Rockin' Mineral Rich Carrot Miso Soup

This soup is one of my absolute favorite recipes ever! I can almost guarantee that if you make this and make sure it’s perfectly-seasoned before you serve it, whoever receives this glorious bowl of nourishment will be begging for the recipe and offering you eternal thanks. It’s happened to me more than once!

I have to give all the credit to one of my culinary crushes, someone who like me is well-versed in classic cuisines of the world as well as alternate styles of food preparation, Chef Franky G. He is the original creator of the recipe and all props go to him! I can’t recall where I found it, but it doesn’t seem to be on his own website, so I am glad it’s here and others can benefit from his original genius!

Miso is a great source of vitamin B12 and various trace minerals plus millions of active microorganisms which benefit the digestion and assimilation of all foods. Since it should not be boiled or subject to prolonged cooking which diminishes its flavor and healthful benefits, it is an ideal salty addition to easy soups made primarily in the Vita Mix. I good rule is that for each cup of liquid, use about 2 or 3 teaspoons of miso, depending on you’re the salt content of the rest of the mixture. 

In addition to the miso, ALL of the rest of the ingredients in this soup are also INCREDIBLY nutrient-rich!! This is a curry-spiced, warming, creamy, and nourishing bowl of yumminess that might be unlike anything you’ve ever had! It’s extra great on a cool or rainy day.

Franky G’s Rockin' Mineral Rich Carrot Miso Soup

8-10 brazil nuts, soaked about 6 hours
2 or 3 Tbsp kelp or other seaweed, soaked in warm water until soft
1 tsp ume plum paste or ume vinegar (optional)
2 tsp curry powder
1 small knob fresh ginger
1 clove garlic
3 Tbsp miso paste
3-4 cups of hot water or herbal tea
2 medium carrots, cut into big chunks
cayenne to taste
sea salt to taste

Add all ingredients to your Vitamix of other high-speed blender. Put in the lid and cover with dish towel. Hold the lid and blend carefully for at least a minute. Check the seasoning, blend again, and pour into bowls or large mugs once it’s ready. Sprinkle with seeds, chopped herbs, etc. to make it beautiful, or serve plain. Enjoy and be nourished!
